Rama's place on the list of Tokyo's best restaurants is due to Chef Aoki's elegantly rustic and delicious cuisine. Decorated with an open kitchen that fuses Japanese-Italian style, the autumn menu often features caprese salad as an appetiser, with an innovative use of fried persimmons instead of tomatoes. The spring-to-summer transition features frozen Gnocchi with mackerel and sour raspberry vinegar.
The signature dish is handmade spaghetti sprinkled with fragrant truffles, made with homemade chicken stock and a butter emulsion made from 24-month-old Parmigiano Reggiano.The only variation with the seasons is the assortment of truffles sourced directly from Italy, but with a distinctive flavour in every bite."
